    • Welcome, fellow foodies! Today I’m excited to share with you my recipe for Spanish Paella Valenciana. This classic dish is sure to be a hit at your next dinner party or family gathering.

    Paella Valenciana is a traditional Spanish rice dish that originated in the region of Valencia. It’s made with saffron-infused short grain rice and usually includes ingredients like chicken, pork, seafood (like shrimp or mussels), vegetables (like peas and peppers) as well as spices like smoked paprika and cumin. The result is an incredibly flavorful meal that will have everyone coming back for seconds!

    To make this delicious paella you’ll need: 2 tablespoons olive oil; 1 onion finely chopped; 1 red pepper diced; 4 cloves garlic minced; 2 cups short grain white rice such as arborio or bomba ; 1 teaspoon smoked paprika ; ½ teaspoon ground cumin ; pinch of saffron threads soaked in hot water until dissolved ; 4 cups chicken stock , heated up before adding it to the pan ; 12 ounces chorizo sausage cut into slices about ¼ inch thick each slice then halved lengthwise if necessary . Then add 8 ounces boneless skinless chicken thighs cut into cubes , 8 ounces peeled deveined raw shrimp , 5 ounce jar pitted Manzanilla olives drained & rinsed plus juice from one lemon . Lastly stir in fresh parsley leaves just before serving !

    Once all ingredients are added together bring everything up to a boil over medium heat stirring occasionally so nothing sticks on bottom of pan . Reduce heat cover & simmer gently until liquid has been absorbed by the rice about 15 minutes more depending on how soft/tender you prefer your grains . Serve immediately while still warm garnished with extra parsley leaves if desired ! Enjoy !

Start by melting 4 tablespoons of butter over medium heat then add 1 finely chopped onion along with 2 cloves minced garlic and sauté until they are lightly golden browned about 5 minutes should do it . Then stir in one 14-ounce can crushed tomatoes as well as 1/4 cup heavy cream plus salt & pepper according to taste . Simmer everything together on low heat while stirring occasionally until thickened about 20 minutes should do it .

    Now it’s time assemble our Butter Chicken ! Add your pre-marinated chicken pieces into the pan containing our rich tomato cream sauce , cover pan with lid , reduce heat slightly & cook covered on low flame for 10 – 15 mins till cooked through completely stirring once mid way during cooking process if needed .     First begin by preheating your oven to 425°F and lightly grease a 12 inch round baking sheet with some olive oil. Next roll out the dough onto the prepared pan so that it covers most if not all of it evenly. Now spread out about ¾ cup each of both cheeses over top followed by spreading out an even layer with either tomato sauce or crushed tomatoes in juice leaving about ½ inch border around edges uncovered . Drizzle over 4 tablespoons extra virgin olive oil then sprinkle any remaining cheeses on top as desired along with those optional basil leaves if using them . Finally brush some additional extra virgin olive oil around edges before putting into oven and bake until golden brown which should take anywhere from 15-20 minutes depending upon how thick/thinly rolled our crust was initially . Once done remove from oven , slice up & enjoy !
